The weather is starting to get a bit chilly and I am craving ALL THE COMFORT FOOD. Gimme all the soups, pastas, and baked goods! While I really love comfort foods, I also love eating healthy foods and taking proper care of my body, which results in me coming up with slightly healthier versions of my favorite indulgences. The healthier versions are definitely still a treat to be enjoyed every now and then, but at least I don’t feel so gross after eating them!
Back in September a coworker of mine decided to give up processed sugar for a month, but that’s pretty hard to do when you work in a bakery. And are also diabetic. About halfway into the month I came up with the idea of date-sweetened cinnamon rolls and decided to whip up a batch before work to surprise my coworker. Her reaction made my entire day and I’m so glad I was able to create a treat she could enjoy while still avoiding processed sugars. The dough for the cinnamon rolls is sweetened with a touch of maple syrup, while the filling is a super sweet and creamy date paste. Top it all off with some cashew cream frosting and you’ve got yourself a delicious cinnamon roll.

Well hello there. I’ve been absolutely awful at keeping up with posting new recipes lately, but to be fair I just haven’t had much time to test many things out. I hope you can forgive me.
Anyway, every year in October my mom and I do October Unprocessed. It’s a pretty nifty challenge that really gets you thinking about what you buy, where it comes from, and what exactly is going into your body each day. If I’m honest, we haven’t made it to the end of the month in a while… although we made it until the night before Halloween about 3 years ago, so I think that counts. My mom and sister decided to give it another go this year while I planned to just watch from the sidelines. I gave it some more thought and figured I already eat really unprocessed, with the exception of cookies at work here and there, so why not just give up my cookies for a month. Plus, I’m really curious to see if eating less processed sugar actually helps clear up some acne (so far it hasn’t, but I’m convinced that’s stress related).

I have a ton of smoothie recipes posted, so I was a bit hesitant to post another, but you can never really have too many smoothie recipes, am I right? Smoothies have become one of my favorite things and I don’t think I could ever go back to a smoothie-less life. They’re just such perfect meals or snacks and a great way to get in fruits and veggies!
I’ve honestly had this recipe sitting in the “notes” on my phone for well over a year, so I figured it might be time to actually post it. I have a bad habit of doing that actually… There’s a whole list of recipes on my phone or various pieces of scratch paper floating around the house that I just haven’t gotten around to photographing and posting. Ah, but that is the life of a busy college student I suppose. After doing homework and taking notes all day on my laptop, the last thing I really want to do is sit down and stare at the screen for even more time, even though I truly enjoy writing these posts. My eyes just can’t take so much screen time! I know, what kind of 20 year old doesn’t want to spend all day everyday in front of technology?

I started writing this post weeks ago and never actually got it posted…. I started classes again a few weeks ago (boy, that 2 week summer vacation flew right by!) and I am now commuting to campus, which is roughly 25-30 minutes away (without traffic). Which means I don’t have time to eat breakfast at home in the mornings, at least not if I want a decent parking spot. I have class until 1:50 on Monday, Wednesday, and Friday, and from 8am – 11:50 on Tuesday. I also work from roughly 12pm-5pm on Tuesdays and Thursdays, so I don’t get to go home for lunch either. Thus, I have started actually doing some meal prep for the week on Sunday. I’m pretty bad at planning out meals because I’ll usually plan something and once it comes time to eat it, I’m really not in the mood for it at all. But I’ll try to stick with it this time. (Also let me know if you’re interested in a post about my weekly meal prep??)
The mornings have been all about overnight oats. I’m a huge fan of oatmeal for breakfast because it’s so versatile. You can change the flavor up so easily, plus it’s super quick and easy to make, especially if you grind up the oats prior to cooking them. Unfortunately, I don’t have time to actually cook oatmeal in the morning anymore, so I’ve switched it over to overnight oats, which I’ve actually been enjoying quite a bit. I thought I would hate eating cold oats, but they’re actually really refreshing on these crazy hot and humid mornings. And if you want a warm breakfast, you can just pop the whole jar in the microwave for a minute or so!

I should really be studying for my exams on Monday and Tuesday, but this is more fun. My summer classes will come to an end on Tuesday, August 4th and I will get to have almost 3 whole weeks of summer vacation! Hopefully I can get out and do everything that I had planned on this summer in the span of 3 weeks. There’s this place called Cloud 9 around here that is basically a giant trampoline playground type thing and I’ve been dying to go for over a year, but haven’t been, so that’s on my summer list. Taking Rory camping, going to the beach, traveling, all kinds of things I want to do! Get ready for the adventures.
This week’s adventures included peach picking with a few pounds of blueberries thrown in because, why not? We ended up picking 101.5 pounds of peaches and 3 pounds of blueberries, which is the most amount of peaches we’ve ever picked at one time. We managed to pick them in about 15 minutes, which is about the time it took us to pick 63 pounds last year. This year was a little different though because we were constantly being attacked by flies and we were picking as fast as we could, running between trees. Oh, and if you’re wondering, yes we managed to fit all of this in my little tiny smart car.

So this week wasn’t exactly exciting or anything, other than a few trips on the boat. I spent most of my week being a giant ball of stress because I had 3 tests in 3 days, which wasn’t exactly the most fun, but I survived! We had planned on going peach picking at some point during the week, but those suckers just won’t ripen up!
So anyway, since I didn’t really do much this week I decided to share my tofu scramble recipe. You’ll have to excuse the really crappy pictures of this recipe- tofu scramble is one of the least photogenic foods out there, plus I don’t have a fancy camera or anything.
Oddly enough, I was never a fan of eggs before going vegan. They were pretty nasty and I would usually have whatever sides we were having with the eggs and just pass of the eggs themselves. The taste and texture really didn’t appeal to me, and now even the idea of eggs disgusts me. I would occasionally eat a few bites of scrambled eggs, but I couldn’t stomach more than a few bites, and I definitely wouldn’t eat a fried egg. Ever. Tofu scramble to the rescue! While I do use black salt in my tofu scramble to add a more eggy flavor, it still doesn’t really taste exactly like scrambled eggs, which is totally ok with me! I actually like tofu scramble way more than I ever liked any kind of egg dish.

I had all intentions of making this a lazy day, but I ended up spending the majority of the day doing homework and chasing around an energetic Rory. I also intended on doing a nice long run in the morning, but got a little over a mile in and my hip started to hurt, so I immediately turned around and went home. No hip bursitis for me! One good thing about the morning though is I changed up my oatmeal flavor, *gasp*! And I mean I completely changed it up… I made carrot cake oatmeal! I probably added way too many carrots, but hey, you learn from your mistakes. I also probably should’ve measured the shredded carrot before I just threw it all in the pot…
I’ll still give you the recipe though because I thought it was deeeeee-licious. Although, not very braces friendly.

Day 9! Another Thursday, which means Chemistry at 8am again… but it also means I finished classes at 12 and got to spend the rest of the afternoon hanging out with the coolest mom ever. Since day 9 wasn’t particularly interesting (we spent the afternoon out and about because it was a cold and yucky day, not ideal for gardening), I’ll give you a little post about how I prepare my breakfasts and lunches throughout the week!
My breakfast is 9 times out of 10 some flavor of oatmeal. As of now you’ve probably caught on to what my top 2 favorite flavors are. Those are my favorites because apples and bananas are 2 fruits that I just absolutely love. Occasionally I’ll make blueberry or strawberry. Peach hasn’t been made in a long time because I used up my whole bag of chopped peaches from the freezer already! I need to pace myself next time and not eat them all so quickly. Or freeze 2 bags of them instead of 1… I think I like the second option better. I decided to have banana oatmeal before class because it’s a lot quicker than the apple one since the apples need to be washed and sliced, then chopped. Plus, the banana one keeps me full longer, which is a plus since I eat around 7:15 am and don’t get home for lunch until 12:15 or later. So here is my basic banana oatmeal recipe:

Yesterday we told my dad that we wanted to try doing an unprocessed month and he was not too excited- he is not a fan of our unprocessed challenges. We don’t make him play along, but he can if he wants. I actually started a bit early and stopped eating sugar and processed things on March 30, which really isn’t that much of a head start, but it means I’m seeing differences already. I actually wanted to get up for my run this morning and have had tons of energy all day. Enough for a long walk to play at the park with Rory, getting some homework done, and making various foods. Yay! I think the only problem we’ve had so far is being a tad bit hungry, but that just means I get to make some delicious afternoon smoothies, so that was an easy fix.
Since we didn’t really prepare for a whole month of completely unprocessed (we only prepared for cutting out sugar for a week, really), I had a bit of preparation to do. After I got home from class I grabbed the bag of almonds and got those suckers soaking in some water. Almond milk is a staple in our house, so I wouldn’t really even know how to function if it wasn’t in the fridge. If you want to cut down on the soaking time for almonds (or any nuts), just bring some water to a boil and then add the nuts. They’ll only need to soak for a couple of hours instead of overnight, which is perfect because I’m extremely impatient and needed the almond milk right away!

I’ve been making a lot of muffins lately. They’re just the perfect grab n’ go snack to always have in the house, especially for busy days! I like being able to grab a muffin as I’m heading out the door to class, my mom can take them for snacks at school, and my dad can take them to work with him, everyone wins!
I try my hardest to alternate the flavor of muffins I make each time I make them. Sometimes it’s blueberry, could be pumpkin, maybe banana, the list goes on and on. The two I’ve been making the most often are pumpkin and banana, especially since we have 2 jars of pumpkin puree in the fridge and 2 bunches of bananas sitting on the counter.
