  1. Vegan French Toast (Using Aquafaba)

    I should really be studying for my exams on Monday and Tuesday, but this is more fun. My summer classes will come to an end on Tuesday, August 4th and I will get to have almost 3 whole weeks of summer vacation! Hopefully I can get out and do everything that I had planned on this summer in the span of 3 weeks. There’s this place called Cloud 9 around here that is basically a giant trampoline playground type thing and I’ve been dying to go for over a year, but haven’t been, so that’s on my summer list. Taking Rory camping, going to the beach, traveling, all kinds of things I want to do! Get ready for the adventures.

    This week’s adventures included peach picking with a few pounds of blueberries thrown in because, why not? We ended up picking 101.5 pounds of peaches and 3 pounds of blueberries, which is the most amount of peaches we’ve ever picked at one time. We managed to pick them in about 15 minutes, which is about the time it took us to pick 63 pounds last year. This year was a little different though because we were constantly being attacked by flies and we were picking as fast as we could, running between trees. Oh, and if you’re wondering, yes we managed to fit all of this in my little tiny smart car.

  2. Blueberries and Hushpuppies

    I’m a bit late for this one, but eh, it’s aight. This week was extremely busy with school, but on Tuesday we went back up to Williamsburg and bought our very first boat! We went for a little sunset sail and it was a lovely evening. After a few more practice sails we will be ready to sail her down to her new home!

    Then on Friday we got to go blueberry picking, which made the entire week better. It even happened to be National Pick Blueberries Day, what a coincidence! Last year we went picking twice and got 15 pounds each time, for a grand summer total of 30 pounds. This year we want to pick even more since we had to start rationing the ones in the freezer around February to make sure they lasted until the summer!

    On our first picking trip we ended up with about 22 pounds, so we are definitely going to beat last year’s total!

  3. Homemade Vegan Mayo with Aquafaba

    OK, so I already missed a post, but it wasn’t on purpose. Plus, day 4 wasn’t all that exciting because I got addicted to those soba noodle salads and have basically been eating them for every single meal except breakfast. Day 5 however, was extremely exciting! I even switched up my oatmeal flavor in the morning! Ok, so I only switched it up because I ate all the bananas, but it still counts. I got the hint though and we got 3 bunches of bananas for the week instead of just 2, which got us plenty of weird looks at the store, but who cares.

    So anyway, back on track. Yesterday I had some apple pie oatmeal for breakfast, then my mom and I headed out to do our weekly grocery shopping. Every Saturday we sit down with a notebook and write out a list of 7 dinners and a grocery list to go along with them, including any other household staples, like bananas ;). This is our way of budgeting and so far it seems to be working out really well. With the exception of our loading up on Whole Soy yogurts (no, I haven’t been eating them this month, but you bet I was that last week of March!) because they are going out of business and we are devastated.
